Washed, Natural, Honey and Pulped Sun-Dried
Processing is what happens to a coffee cherry between the tree and the sack, and it changes the cup more than the roast does. Four methods, what each one physically involves, what it costs the person doing it, and what it puts in your cup.
What processing actually is
A coffee cherry is a fruit with two seeds in it. Between skin and seed sits a layer of sticky, sugary pulp called mucilage, and inside that the seed is wrapped in a papery husk called parchment. Every processing method is a decision about two things: how much of that fruit you remove before drying, and how long the sugars sit against the seed while microbes work on them.
That decision is made on the farm in the first twelve hours after picking, and it is irreversible. A roaster can develop or ruin what processing produced but cannot add fruit character that was never put there. All four methods end in the same place — parchment dried to between 10 and 12 percent moisture. What changes is the route.
Washed
What happens. Cherry goes into water within hours of picking. Unripes and damaged fruit float and are skimmed off, a quality step in its own right. The rest runs through a pulper that strips skin and pulp mechanically, leaving parchment still coated in mucilage. That goes into a fermentation tank for roughly 12 to 36 hours, with Indian estates towards the longer end, while enzymes and native microbes break the mucilage down. The producer checks by hand: rub the parchment and if it squeaks rather than slips, it is done. Then it is washed clean in channels and dried for seven to twelve days.
What it costs. A pulper, tanks, channels, drying space and water. Older setups used a great deal of water per kilo of cherry; modern eco-pulpers cut that sharply, which matters when harvest falls in the dry season. The effluent is acidic and has to be handled rather than dumped. Against that, washed coffee dries quickest, so the producer is paid sooner.
What it risks. Over-fermentation, which gives onion and vinegar defects and can take a lot down within hours of inattention; under-fermentation, which leaves mucilage that dries stained; and water, since none at harvest means no washed coffee.
What it does to the cup. The fruit comes off before it can influence the seed, so you taste varietal, altitude and soil with very little added. Cleaner, more acidity, lighter body. To know what a farm's terroir tastes like, taste its washed lot.
Natural
What happens. Nothing is removed. Whole cherry goes onto raised beds or a patio and dries in its own fruit for 15 to 30 days, the pulp sugars fermenting against the seed throughout. In the first days it must be spread thin and turned every hour or two, or the pile heats and rots from the inside.
What it costs. Almost nothing in equipment — no pulper, no tanks, no water. Everything in space, time and labour. A natural needs several times the drying area of a washed lot, holds it three to four times as long, and demands constant hand-turning. The producer's cash is delayed by weeks.
What it risks. More than any other method. Mould, phenol and uneven drying are live threats for a month, and one unseasonal shower on day six can take out the lot. In India that risk is not theoretical, which is why a genuinely clean Indian natural is worth paying for.
What it does to the cup. Heavy body, low perceived acidity, a great deal of sweetness and fruit. Indian naturals do not taste like Ethiopian ones: the base sugar is heavier and the acidity lower, so instead of blueberry and booze you get jackfruit, raisin, date and dark caramel.
Honey
What happens. Cherry is pulped as if for a washed coffee, then skips the tank and the wash entirely and goes to the drying bed with its mucilage still on, for 10 to 20 days. The colour names describe how much was left and how slowly it dried: white honey has the least and dries fastest in full sun, yellow and red sit between, black honey keeps nearly all of it and dries slowest under shade.
What it costs and risks. The equipment bill of a washed coffee plus the drying burden of a natural, which is why it is not the cheap option people assume. Sticky parchment clumps, so it must be broken up and turned constantly through the first week; clumping left alone causes uneven drying and mould pockets inside a bed that looks fine on top.
What it does to the cup. Body and sweetness leaning towards a natural, clarity leaning towards a washed. Caramel, stone fruit, honeyed sweetness, and a rounder acidity than the same coffee washed.
Pulped sun-dried
What happens. The same core operation as honey — pulp the cherry, leave the mucilage on, sun dry the parchment. It earns a separate heading because it arrived in India independently and works differently in the trade. Honey processing entered specialty vocabulary from Costa Rica with deliberate control over how much mucilage was retained. Pulped sun-dried, usually written PSD, has been mainstream Indian estate practice for decades: at volume, on open concrete yards, on robusta as readily as arabica, without the percentages the honey colours imply.
Why India does it. Never primarily a flavour decision. PSD uses a fraction of the water of full washing, and dries faster and more safely than a full natural. In a country whose processing calendar is organised around avoiding rain, it is the pragmatic middle.
What it costs and risks. A pulper and a yard. Cheaper on water than washed, faster than natural. The risk is yard drying itself: parchment spread deep on concrete dries unevenly, clumps if unturned, and heats from below in strong sun. Late showers are the main threat.
What it does to the cup. The classic Indian estate profile, and if you have a memory of what Indian coffee tastes like, PSD is probably responsible for it. Rounded, sweet, spiced, low in acidity, heavy in body. It is the house style of Kodagu in particular.
Pulped sun-dried is not an Indian trade grade. Plantation means washed arabica, Cherry means natural arabica, and Robusta Kaapi Royale is a top washed robusta grade. AA, A and AB are screen sizes — how big the bean is, not how it tastes.

Anaerobic and carbonic maceration are modifiers, not processes
Anaerobic fermentation and carbonic maceration do not replace the four methods above. They modify the fermentation step, and the lot still finishes as a washed, a natural or a honey. Every anaerobic coffee is also one of those things.
Anaerobic means the ferment is sealed off from oxygen, in a closed tank with a one-way valve letting carbon dioxide out while air cannot get back in. That changes which microbes dominate and slows everything down, making a long ferment controllable instead of a gamble. Many producers now inoculate deliberately — lactic acid bacteria, selected yeasts, prepared cultures — rather than leaving it to whatever is on the fruit.
Carbonic maceration is the stricter term, borrowed from Beaujolais winemaking: whole intact cherry in a sealed vessel actively flushed with carbon dioxide, fermenting inside the unbroken fruit before the cell walls give way. The trade uses both words loosely, and plenty sold as carbonic maceration is a sealed ferment without the flush.
Cup and risk. It intensifies and redirects fruit rather than adding body — a distinct aromatic signature, often floral or tropical, and a softer lactic acidity in place of a sharper citric one. Done badly it tastes like the tank rather than the farm. A sealed ferment goes wrong faster than any conventional method, and by the time you can smell the problem the lot is gone.

What is the difference between washed and natural coffee?
Washed coffee has all the fruit removed before drying, giving a cleaner, more acidic, lighter-bodied cup that shows varietal and altitude clearly. Natural coffee dries in the whole cherry over three to four weeks, so fruit sugars ferment against the seed throughout, giving heavy body, low acidity and a lot of sweetness. Same tree, same picking day, two different coffees.
Is honey process the same as pulped sun-dried?
Physically the same operation: skin off, mucilage left on, dried as parchment. The difference is control and context. Honey processing came from Costa Rica with deliberate management of how much mucilage is retained, which the white, yellow, red and black names describe. Pulped sun-dried is long-standing Indian estate practice done at volume on open yards, on robusta as well as arabica, without those percentages.
Which processing method makes the best coffee?
None of them. Each is a trade-off between clarity and body. A well-executed washed coffee beats a badly dried natural, and the reverse is equally true. What actually predicts quality is ripe selective picking and even drying, both of which cost labour and neither of which appears on the bag.
What is anaerobic coffee?
Coffee fermented in a sealed tank with oxygen excluded, usually through a one-way valve letting carbon dioxide out but no air in. It is not a fourth process — an anaerobic lot still finishes as a washed, a natural or a honey. Excluding oxygen changes which microbes dominate and makes a long ferment controllable rather than a gamble.
Why do natural and fermented coffees cost more?
They hold the producer's drying space three to four times as long, need constant hand-turning, delay payment by weeks and can fail a fortnight into drying. Sealed ferments add tanks, cultures and monitoring. You are paying for risk somebody else carried, and for the lots that did not make it.
Can roasting fix or replace processing?
No. Roasting develops what is already in the bean and can certainly bury it, but cannot put fruit character into a coffee that was washed. Processing decisions are made on the farm within hours of picking and are irreversible. That is why the process is printed on the bag next to the origin.
