The fruit around the coffee bean, dried and steeped as tea.
Every coffee bean grows inside a cherry. At the mill the fruit is usually composted. This is that fruit, dried on raised beds at Udaygiri Estate, kept back and sold as tea.
It is called cascara, and it does not taste like coffee. Steep it hot, cold-brew it in the fridge, or use the cold brew as a base for tonic or soda. It is low in caffeine, roughly a quarter of a cup of coffee.

Brew it hot
- Cascara8 g
- Water250 ml
- Temp95 °C
- Steep5–6 min
1 Add 8 g of cascara to a cup or a small pot.
2 Pour in 250 ml of water at 95 °C.
3 Steep for 5 to 6 minutes.
4 Strain and drink it as it is.
Brew it cold
- Cascara30 g
- Water1 litre
- Steep12–18 h

1 Add 30 g of cascara to a jar and pour in 1 litre of cold water.
2 Cover it and leave it in the fridge for 12 to 18 hours.
3 Strain and serve over ice.
4 For a long drink, top it up with tonic or soda.

Keep it sealed, dry and out of the light.

Seal the bag after every use and keep it somewhere cool, dry and dark. Not the fridge, not the freezer — both move moisture into the beans.

Grind immediately before you brew, and use filtered water. Ground coffee loses more in an hour than whole bean loses in a week.
