The first spring harvest. It is what gives matcha its umami and its smoothness, and it is what ceremonial grade is judged on.

Matcha is tea leaf shaded before harvest, then ground on stone to a fine powder. This is the first flush of the year: 100% Japan, vibrant in the tin and in the bowl.

How to prepare
  • Matcha2 g
  • Water70 ml
  • Temp75–80 °C
  • WhiskW strokes

1 Sieve 2 g of matcha into a warm bowl.

2 Add 70 ml of water at 75 to 80 °C.

3 Whisk in a W motion until a fine foam covers the surface.

4 Drink it straight from the bowl.

It also works as the base of a latte, and it is fine enough to go straight into food work.

Care

Keep it sealed, cool and out of the light. Shelf life is 6 to 12 months, and it is at its best within 6 to 8.

Seal the bag after every use and keep it somewhere cool, dry and dark. Not the fridge, not the freezer — both move moisture into the beans.
