  1. Where it grows

    Kaimara is a belt of growing land in Chikmagalur, between 1,000 and 1,250 m, and not a single named estate. Samia Subhani grows SLN 795 there. For this lot the cherries are dried whole, in full fruit, in the highlands. It is one of our best-selling naturals.

  2. Why natural

    Natural processing brings the tropical fruit forward and leaves a dessert-like sweetness underneath. We roast it to Depth 28 so that sweetness stays smooth and complex and does not turn heavy. A classic Indian natural reads wild and drinks refined. It is fruit first, so if you like your coffee quiet, look at the washed twin, Candy Paradox. Brew the two side by side to taste what drying alone does.

Keep it

Seal the bag after every use and keep it at room temperature, away from light and the stove. Not in the fridge. Finish an opened 250 g bag within three to four weeks. Whole bean keeps longest.

How is it different from Candy Paradox?

Same SLN 795, same grower. Jungle Jam is dried whole in the cherry and roasted lighter, so tropical fruit and raisin lead. Candy Paradox is washed and roasted darker, so it is cleaner, with spiced caramel and honeydew.

Can I make espresso with it?

Yes. As espresso it runs 1:2 in 28 to 32 seconds, dense and sweet. Filter and AeroPress are the other two brewers it is roasted for.
