  1. Where it grows

    The Central Highlands of Vietnam, which grow roughly four-fifths of the country's robusta. Vietnam grows more robusta than any other country, and most people only ever meet it as instant. This lot is a natural: the cherries were dried whole, with the fruit still on.

  2. How we roast it

    Depth 36, medium light. Robusta is often roasted dark and sold for strength. We roast this one for sweetness, which brings the chocolate and the dried fruit forward and leaves out the harshness. The body stays full enough to sip slowly and to stay present in milk. Roasted to order in New Delhi.

  3. Why it tastes like this

    The natural process is what puts fruit in this cup. Dried in the cherry, the bean carries a fruit sweetness most canephora never shows, laid over deep chocolate. On filter, chocolate leads and the raisin and cashew arrive as the cup settles. As espresso it is syrupy and creamy, sweet through the tail rather than bitter.

  4. What to expect

    Vietnamese coffee is usually roasted dark and brewed strong. This is not that. It is sweeter and fruitier, and it keeps the body. If you want the dark, bitter cup, a medium light roast will not give it to you.

Is Red Lantern the dark, strong Vietnamese coffee?

No. Vietnamese coffee is usually roasted dark and brewed strong. This is a natural robusta roasted medium light, so it is sweeter and fruitier, with dark chocolate and golden raisin on filter. It keeps the full body.

Does it work in milk?

Yes. The body is full enough to stay present in a flat white or a latte, and espresso pulls syrupy and creamy, sweet through the tail rather than bitter.
