Grown at Ammikulavi Estate in the hills of Tamil Nadu, between 1300 and 1400 MASL. The lot is canephora, sealed and fermented for 96 hours before drying.

Roasted medium light to hold the fermentation sweetness in place. The body is syrupy and the finish long, with no harshness behind the intensity.

Roaster's note

Robusta is usually judged by its worst examples. This lot was grown, fermented and roasted with the care normally reserved for the finest arabica, and it is the first release in our canephora series.

Storing it

Seal the bag after every use and keep it somewhere cool, dry and dark. Not the fridge, not the freezer — both move moisture into the beans.
