Champagne fermentation gives this canephora white grape, then pear as it cools.
Grown at Kaapi Kaadu Estate in Karnataka and processed under a champagne fermentation protocol. The ferment brings sparkling fruit, layered sweetness and a structure rarely found in canephora.
Roasted medium light, so filter stays bright and grows sweeter as the cup cools. As espresso it moves into darker sugar and dried fruit over a dense, syrupy body.

Grind immediately before you brew, and use filtered water. Ground coffee loses more in an hour than whole bean loses in a week.
