Tasting notes

  • Raisin
  • Sweet lime
  • Dried dates
  1. The ferment

Ripe SL9 cherries are hand-picked and floated to remove the lights. They are sealed with EM5, a live microbial culture and not a lab strain, and kept submerged for 74 hours. Then they dry on raised wooden trays, under shade, for 15 days. Melkodige is where we go when we want to know whether a fermentation idea works on real cherry.

  2. Why it tastes like this

The ferment sets cocoa and raisin at the core and lifts sweet lime through the middle. We hold the roast at Depth 24 so the lime sparkle survives without losing the chocolate underneath. It is an expressive natural that still behaves on the brew bar: juicy without going wild, sweet without turning candied. It is not a quiet coffee.

Keep it

Seal the bag after every use and keep it at room temperature, away from light and the stove. Not in the fridge. Finish an opened 250 g bag within three to four weeks. Whole bean keeps longest.

Pair it

  • Soda water and a slice of lime, on the side.
  • Dark chocolate.

03questions
Is it in stock?

No, it is between lots. The Notify me button on this page tells us you are waiting, and we let you know the day it is back.

What is EM5?

A live microbial culture used for the ferment, not a lab-grown strain. The cherries are sealed with it and kept submerged for 74 hours before they go to the raised trays to dry.

Is it good as espresso?

Yes. It runs about 1:2.3 in 30 to 34 seconds, syrupy with a citrus pop. Give it a week after roasting before you pull it.
