A washed arabica from Udaygiri Estate in Karnataka, roasted medium dark for weight and structure. The washed character keeps the cup articulate where a deep roast usually flattens it.

On filter the citrus is subtle rather than sharp, enough to lift the cocoa and brown sugar underneath. As espresso it goes dense and bittersweet, and the chocolate and nut hold their shape in milk.
