We roast thirty-plus coffees. You don't need thirty-plus coffees — you need to find the one that becomes your everyday. THE FOUR is the shortest route there: a washed Ethiopian, an Indian peaberry, a Vienna-roast blend and a natural Vietnamese Canephora, each in a 100 g bag, each roasted to order.

Enough of each to brew it eight or nine times, which is the point. One cup tells you nothing. A week tells you everything.

• Red Lantern — natural Canephora from Vietnam's Central Highlands. Heavy body, low acidity, unapologetic.
