  1. One estate, two lots

    Ratnagiri Estate runs more than 15 processing protocols in a season, all off the same hillside in Chikmagalur. This pack takes two of them, one washed lot and one natural lot, packed together at 250 g each. Same farm, one variable changed. The variable is what the pack is about.

  2. Washed against natural

    Washed takes the fruit off the bean before it dries, and the cup comes out clean. Natural dries the cherry whole, and the cup picks up fruit. At Ratnagiri the washed end tastes of clean cocoa and defined sweetness, the natural end of red fruit and jam. The two pull the same origin in opposite directions, and here you are not asked to choose.

  3. Blending it

    Weigh both lots, mix the whole beans and grind them together. 50:50 gives balance. 70:30 washed to natural leans toward clarity. Go the other way and body and sweetness come forward. Brew each lot alone first if you like, since each stands on its own. The pack is roasted medium, Depth 45, after you order in New Delhi.

Keep it

Seal both bags after every use and keep them somewhere cool, dry and dark. Blend by the brew, not by the bag, so the ratio stays yours to change. Best within 4–8 weeks after roasting.

How do I blend the two lots?

Weigh both, mix the whole beans and grind them together. 50:50 gives balance, and 70:30 washed to natural leans toward clarity. Go heavier on the natural for more body and sweetness. At 20 g of coffee, 50:50 is 10 g of each.

Which grind should I choose?

Whole Bean is simplest: weigh, mix, grind. If you choose a grind for your brewer, the coffee comes ground that way and you can still mix the two lots by weight.

Can I brew each lot on its own?

Yes. Each lot stands on its own, and a cup of each side by side shows you what the blend is doing. Then start at 50:50.

Will you make it again?

No. Drop 03 is a small batch, and drops are not repeated. When the bags are gone, they are gone.
