    Kerehaklu Estate, Karnataka, at 1,100–1,200 m. Pranoy Thipaiah grows the SLN 9 for this lot, and the same estate gives us Moss Theory. Cultured 42 is the precise one. The ferment is controlled so the cup stays clear, where Moss Theory lets it show.

  2. How it is fermented

    42 hours of controlled anoxic fermentation, started with selective inoculation, then washed. Inoculation means the ferment begins with chosen cultures and is not left to whatever is on the cherry. It layers a classic washed profile without overrunning it. The cup stays clean, with a soft, pastry-like sweetness under the fruit.

  3. How we roast it

    Roasted light, to Depth 20, with filter in mind. A light roast keeps the apple and the lime where you can taste them. The cup opens with bright clarity, moves through a smooth, cultured sweetness and finishes long and balanced. Under pressure it holds a rounded acidity, so it works as espresso too.

Keep the bag sealed, cool, dry and dark. Not the fridge, not the freezer. Grind just before you brew. Whole bean keeps longest, and a light roast tastes brightest in the first weeks after roasting.

What does the 42 mean?

42 hours. That is how long the coffee ferments under controlled anoxic conditions, started with selective inoculation, before it is washed.

Is it a washed coffee or a fermented one?

Both. The profile is a classic washed one, and the 42-hour ferment adds the layers. The cup reads clean, with a soft pastry sweetness under the green apple and lime.

Does it work as espresso?

Yes. It is roasted light with filter in mind, but it holds a rounded acidity under pressure: caramel, almond cream, citrus peel. We would drink it black, and pull it short.

Which grind should I choose?
