No air, a live culture, and fruit held still.
A 100% Arabica from Kaapikaadu in Karnataka, grown by Mr. Lobo. Whole cherry, sealed away from oxygen, fermented with EM5 — a live culture rather than a lab strain, which keeps the ferment slow and the acidity round instead of sharp.
Dried on the fruit and roasted medium light. The date and the cocoa carry the weight; the sweet lime is what stops it going heavy.
Roaster's note
The most forgiving of the three. Works at almost any ratio, and it is the one to hand someone who says they do not like fermented coffee.

Seal the bag after every use and keep it somewhere cool, dry and dark. Not the fridge, not the freezer — both move moisture into the beans.

Grind immediately before you brew, and use filtered water. Ground coffee loses more in an hour than whole bean loses in a week.
