Tamil Nadu's coffee comes off the Shevaroy hills around Yercaud, the Nilgiris and the Anamalais. Higher and drier than most of the Karnataka belt, with a different monsoon pattern behind it. The cups tend to be firmer and more structured, cocoa and dark sugar rather than obvious fruit, and there is a long local habit of growing robusta on the lower slopes alongside arabica higher up.

This is also the coffee the South Indian steel filter was built around, and that is worth reading as a brewing instruction rather than a piece of heritage. These lots take a fine grind and a long, gravity-fed contact time better than most. If you are brewing them as pour over instead, drop the dose slightly. The same beans that give a dense, sweet decoction can come out heavy and flat through a V60 at a standard 1:16, and the fix is less coffee rather than a coarser grind.
