Delhi has a lot of good coffee shops and far fewer actual roasters, because most cafés brew beans somebody else roasted. Here is a neutral guide to the specialty roasters you will find in Delhi NCR, where their beans come from, and where BROOT fits.

Roaster, or just a café?
A roastery buys green coffee and applies heat to it, so it owns the decision on origin, roast level and profile. A café buys already-roasted coffee, usually from a roastery, and brews it well, which is its own genuine skill but a different business. Plenty of Delhi's best-loved coffee spots are cafés first: good espresso, someone else's beans. Nothing wrong with that, but it's worth knowing which is which before you assume a bag on a café counter was roasted on-site. Ask any café which roaster supplies them; a good one will tell you without hesitating. Where any Delhi roaster's beans actually come from
Worth saying plainly, since it applies to every name on the table above, not just us: nobody roasting in Delhi is growing coffee in Delhi. The city has no coffee-growing climate. The great majority of India's coffee comes from the Western Ghats of Karnataka, Kerala and Tamil Nadu, with smaller pockets in the Eastern Ghats and the north-east. On a map that means Chikmagalur, Coorg and Baba Budangiri in Karnataka, Yercaud in Tamil Nadu, Araku Valley in Andhra Pradesh and Koraput in Odisha. Every Delhi roaster works with coffee grown somewhere else in the country and shipped in as green beans. The difference between roasters isn't whether they source from elsewhere, because all of them do. It's whether they can tell you specifically where from, and whether they bought it directly from the estate or through the anonymous bulk market.
