Roastery, café, reseller

Three different businesses get described as coffee places in Delhi, and only one of them applies heat to a green bean.

A roastery buys green coffee, roasts it, and sells the result. It owns the decision about how far a lot goes and why. It can tell you the estate, the varietal, the process and the profile, because it chose all four.

A café buys roasted coffee, usually from a roastery, and brews it for you. Some cafés roast. Most do not, and there is nothing wrong with that — brewing well is its own trade.

A reseller buys sealed bags and puts them on a shelf or a marketplace listing. Its coffee is exactly as fresh as its stock turnover, and stock turnover on a slow-moving line is measured in months.

The distinction matters for one reason. Roasted coffee starts dying the moment it leaves the drum, so freshness is a question of how many days and how many hands sit between the roaster and your grinder. Every step you add is time the coffee spends losing what you paid for.

What to check before you buy

  • A printed roast date. Not a best-before date. Best-before dates on coffee are usually set six to twelve months out and tell you nothing about the cup. If a bag will not say when it was roasted, assume there is a reason.
  • Whole beans, or ground to order. Ground coffee loses its aromatics in hours, not weeks. If it is ground for you at the point of sale for your specific brewer, fine. If it was ground into a bag on a production line, the clock started then.
  • A named estate. Region, varietal and process, in writing. India has thousands of estates and the good ones have names. Premium Arabica Blend is not information, it is a category.
  • Batch size. A small drum can afford to roast one estate on its own terms. A large plant needs volume, which pushes it towards blending across lots and roasting to a profile that survives a long shelf life rather than one that flatters the coffee.
  • Whether they answer questions. Ask what the roast level is, what the drop temperature was, or why they bought the lot. A roaster will have an answer. A reseller will send you a marketing paragraph.

We roast in New Delhi on two 2 kg roasters, in batches, once an order is in. That is a deliberate constraint rather than a boast: at 2 kg a batch we cannot roast into a warehouse and wait for the coffee to sell, so we do not.

Bags leave us within 48 hours of coming off the roaster, and the roast date is printed on every one of them. That is the point of printing it. You can check the claim against the bag in your hand rather than taking our word for it.

Direct from the estate

We buy our green coffee direct from estates rather than through the anonymous bulk market, which is what makes it possible to put a name, an elevation and a process on the label and answer questions about any of them.

Storing coffee in Delhi

Delhi is hard on coffee twice a year for different reasons. Through May and June the heat is the problem, because staling reactions run faster in a warm cupboard. Through the monsoon the problem is humidity, and that one is worse. Roasted coffee is hygroscopic and ground coffee especially so, and coffee that has taken on ambient moisture goes dull and papery well before its roast date suggests it should.

Four practical rules. Keep the coffee in its original valved bag, push the air out, roll the top down and clip it. Store it in a cool, dark cupboard away from the hob, not on the counter and not in a clear jar. Do not refrigerate it, because a bag taken in and out of a fridge condenses moisture on the beans every time. Buy smaller amounts more often, which is the only method that genuinely works.

Delivery

We dispatch across Delhi NCR — Gurugram, Noida, Ghaziabad, Faridabad — and to the rest of India. Courier transit times vary by pin code and by season, and we will not pretend to control them. What we control is the gap between the roast and the dispatch, which is why the roast date is on the bag. If you are ordering for a specific weekend, order early in the week rather than on the Friday.

What is the difference between a coffee roaster and a café?

A roaster buys green coffee and applies heat to it, deciding the roast profile for each lot. A café buys coffee that has already been roasted and brews it. Some businesses do both, but most cafés are customers of a roastery rather than one themselves.

How fresh should coffee from a roastery be?

Look for a printed roast date rather than a promise. Most filter and espresso coffee drinks best somewhere between about seven and thirty days off roast, with darker roasts settling faster and lighter ones needing longer to release carbon dioxide. Anything without a roast date is unknowable.

Should I buy whole beans or ground coffee?

Whole beans, if you own any kind of grinder. Grinding multiplies the surface area exposed to air, and most of what makes fresh coffee smell like fresh coffee is gone within hours of that happening. If you are buying ground, buy small quantities and buy them more often.
