  1. The blend

    Washed Arabica and canephora, blended. Canephora is the species usually sold as robusta, and it is named here because it is in the bag. Washed means the fruit comes off the bean at the mill before drying, so what reaches the roastery is the seed and little else. Grindstone is sold as a blend, and it is made to be used every day.

  2. How we roast it

    Depth 72, medium dark. We take it there for weight rather than nuance, which is why the cup comes out heavy-bodied and low in acidity, with dark chocolate and roasted nuts in front. A jaggery-like sweetness sits underneath and keeps it from going flat. Roasted in small batches at our roastery in New Delhi, to order.

  3. How it behaves

    Easy to dial in, and steady across methods. On espresso it pulls thick crema. In a French press it drinks bold. In a South Indian filter it reads familiar, which is what an everyday coffee should do. It holds up in milk. It is not a delicate coffee, so if you want fruit or flowers in the cup, choose a lighter roast.

Reseal the bag after every use and keep it cool, dry and dark. Not the fridge, not the freezer. Grind just before you brew; whole bean keeps longest.

Does Grindstone contain robusta?

Yes. It is a blend of washed Arabica and canephora, the species usually sold as robusta. If you would rather have an all-Arabica cup, write to us and we will point you to one.

Does it work with milk?

Yes. It is roasted dark enough to hold milk, and the dark chocolate and roasted nuts come through it. It suits a flat white, a cortado or a South Indian filter coffee made the usual way.

Is Grindstone good for a moka pot?

Yes. Choose the Mokapot grind, fill the basket level without tamping, keep the flame low and take the pot off the heat as soon as it starts to sputter.

Can I get it ground?

Yes. Choose the grind when you add it to the cart: whole bean, home or commercial espresso, South Indian filter, AeroPress, moka pot, pour-over, Chemex, French press or cold brew. Both 250 g and 1 kg come in every grind. We grind exactly what you choose and cannot un-grind it, so order whole bean if you are unsure.

How fresh will it be?

Roasted to order. Most orders leave us within 1–2 working days, up to 4 in a heavy roast week. Courier delivery usually takes 2–4 working days to the metros and 4–7 to the rest of India.
