Dark honey: the mucilage decision, legible in the cup.

SLN 795 grown on the slopes of Unnaki, between 1,220 and 1,430 m, taken through a dark honey process that leaves part of the mucilage on the seed through drying — the golden weight in the cup comes from exactly that decision.

1,220 to 1,430 m in Chikmagalur

Unnaki sits on the slopes of Chikmagalur district between 1,220 and 1,430 m — squarely inside the district's arabica band, growing the same SLN 795 workhorse varietal common across the Malnad.

Honey, deliberately

Part of the mucilage stays on the seed through drying, which is where the golden weight comes from — honeyed apricot and dried fig, closing on wildflower nectar. It's the middle path between a full wash and a full natural: more sweetness and texture than washed, more control than natural.

What we buy

Shelf check, updated live

Nothing from this farm on the shelf this week. The relationship outlasts any one harvest.

“Dark Honey is the lot we point to when explaining honey processing — the mucilage decision is legible in the cup in a way that's hard to fake, and it sits at exactly the sweetness level a filter drinker who finds naturals too wild is looking for.”
