Arabica vs Robusta: An Indian Perspective
Most of what is written about arabica and robusta is written from countries that grow only arabica. India grows roughly seven parts robusta to three parts arabica. That changes the argument considerably — and it means an Indian roaster has to have an actual opinion rather than a slogan.
Arabica and robusta are different species. Arabica has roughly half the caffeine, more sugar and more lipids, and grows at high altitude; robusta has more caffeine and chlorogenic acid, resists disease, yields more, and grows low and hot. Arabica is usually sweeter and more aromatic. Robusta is heavier, more bitter and gives better crema — and well-processed fine robusta is genuinely good coffee.
Two different plants, not two grades
The first thing to get straight is that this is a botanical distinction, not a quality ladder. Coffea arabica and Coffea canephora are separate species in the same genus. "Robusta" is properly the name of the dominant cultivar group of C. canephora, which is why you will increasingly see specialty green listed as canephora rather than robusta — it is the more accurate term and it carries less baggage.
Arabica is a tetraploid with 44 chromosomes, and it is a natural hybrid: a cross between C. canephora and C. eugenioides that happened once, in the highlands of what is now South Sudan and Ethiopia, and then doubled its chromosome count. Canephora is a diploid with 22. Arabica is largely self-pollinating, which is why its cultivars breed true and why its global genetic base is famously narrow. Canephora is self-incompatible and must cross-pollinate, which makes it far more genetically diverse and far harder to keep uniform on an estate.
So robusta is, in a real sense, one of arabica's parents. It is not a degraded version of it.
India's numbers make the point. The Coffee Board of India's post-blossom estimate for 2025–26 put national output at a record 4.03 lakh tonnes, of which 2.84 lakh tonnes was robusta and 1.18 lakh tonnes arabica — about 70% robusta. The 2024–25 final figures were 3.63 lakh tonnes total, 2.57 robusta and 1.05 arabica. Kerala's crop is almost entirely robusta: 83,000 of 85,150 tonnes. Karnataka, the largest producer, ran 1.95 lakh tonnes robusta against about 85,000 tonnes arabica. If you sell only arabica in India, you are ignoring most of what the country grows.
What is actually inside the bean
The published figures vary by study, by cultivar and by season. What follows are reported ranges from peer-reviewed compositional work, not single numbers, because single numbers here are usually somebody rounding.

Three of those matter in the cup.
Caffeine is roughly double in robusta. Caffeine is bitter, but it contributes far less to a coffee's perceived bitterness than people assume — it is a modest fraction of the total. Its real significance is agronomic: it is an insecticide the plant makes for itself, and it is part of why robusta survives at low altitude where pest pressure is brutal.
Chlorogenic acids are the bigger story. Robusta carries substantially more, and during roasting they break down into quinic and caffeic acids and into phenolic compounds that read as harsh, astringent and, at dark roasts, ashy. This is the main chemical reason under-processed robusta tastes the way it does. It is also why robusta punishes a careless roast far more than arabica does.
Sugars and lipids. Arabica's higher sucrose feeds the Maillard reaction and caramelisation, which is where sweetness and most aromatic complexity come from. Its higher oil content carries aroma and gives a rounder mouthfeel. Robusta starts with less of both. Reported sucrose figures for robusta are all over the place — one widely cited study puts it at 0.9–4.85%, another at 4.05–7.05% — so treat any confident single figure with suspicion. The direction of travel is not in dispute: arabica has more.
Composition sets a ceiling, not a floor. A badly picked, badly dried, badly stored arabica will be worse than a carefully processed canephora, every time. Species explains the shape of a coffee's potential. Processing and handling explain whether that potential arrives in the cup.
Altitude, heat and disease
Arabica wants cool. It performs best at high elevation with mild temperatures — in India that means the higher blocks of Chikmagalur, Bababudangiri, Coorg, the Nilgiris and Araku. Cool nights slow cherry maturation, and slow maturation is what builds sugar and density. It is also a fussy plant: susceptible to coffee leaf rust (Hemileia vastatrix), the disease that wiped out Ceylon's coffee industry in the nineteenth century, and to white stem borer, which is a serious problem on Indian estates.
Canephora wants heat and rain, tolerates low elevation, and carries strong resistance to leaf rust. It yields substantially more per hectare and needs less intervention. In a warming climate, at the altitudes most of India actually farms, that combination is not a compromise — it is the only crop that works.
The consequence for flavour is real but often overstated. Low-altitude, fast-maturing cherry accumulates less sugar, and the resulting cup has less inherent sweetness and acidity to work with. But India's robusta is largely shade-grown under multi-tier canopy, often alongside pepper and cardamom, and shade lowers canopy temperature and slows ripening. A shaded Wayanad or Coorg robusta is not the same crop as a sun-grown, mechanically stripped Vietnamese lowland robusta, even though the trade calls both robusta and the futures market prices both off the same London contract.
Crema, body and why robusta got its reputation
Robusta produces more crema, and more stable crema, than arabica. The usual explanation is its lower lipid content combined with a higher proportion of surface-active proteins and polysaccharides — fats destabilise foam, so less fat means the foam lasts. This is exactly why traditional Italian espresso blends and virtually every Indian filter coffee blend include robusta: it delivers crema, body, and the thick texture that survives milk and sugar.
So why the reputation? Because for most of the last fifty years, robusta was grown, harvested and processed as a commodity input for instant coffee, where flavour subtleties are irrelevant and volume is everything. Strip-picked whether ripe or not, dried on bare ground, sold by weight into a market that paid no premium for care. The cup that results — rubbery, woody, harshly bitter — is the cup most people mean when they say they do not like robusta. They are describing a farming and processing economy, not a species.
The price gap enforced it. When robusta trades at a fraction of arabica, no grower can justify selective picking, controlled fermentation or parchment processing, because there is no buyer paying for it. Break that loop and the coffee changes.
Fine robusta and how it is scored
"Fine robusta" is not a marketing adjective. It is a defined standard, developed by the Coffee Quality Institute with the Uganda Coffee Development Authority, with its own cupping protocol and its own certified graders — R-Graders, the robusta equivalent of Q-Graders.
The thresholds, as published:
- Fine robusta: a cupping score of 80.00–84.99 or above on the CQI robusta form.
- Premium robusta: 75.00–79.99.
- Commodity: below the premium band.
- Green grading: zero primary defects and no more than five secondary defects in a 350 g sample.
- Roast grading: a maximum of three quakers in a 100 g sample.
Two things are worth understanding about the protocol. First, it is a separate form from the SCA arabica form — robusta is evaluated on attributes appropriate to robusta, including its salt-to-acid and bitter-to-sweet balance, rather than being marked down for failing to taste like a Kenyan. Second, and this is the part people miss: an 82-point fine robusta and an 82-point arabica are not scored on the same scale. They are both good examples of their species. Comparing the numbers directly is meaningless.
India has serious fine robusta producers. Kaapi Royale Coffee at Sethuraman Estate in Karnataka, founded in 2008, holds more CQI R-certifications than any single robusta farm anywhere. St. Margaret Estate has been running controlled-culture fermentations on canephora and pulling out notes — raspberry, thyme, plum — that most drinkers would refuse to believe came from a robusta if you told them in advance.
We buy into this deliberately. OBSIDIAN is a 96-hour anaerobic canephora, and ÉTOILE NOIR is a champagne-fermented canephora. Both are processed with the care normally reserved for microlot arabica, and both are the fastest way to find out whether your objection to robusta is to the species or to the way it is usually farmed.
Robusta Kaapi Royale
If you buy Indian green coffee, this is the grade name you will meet. Robusta Kaapi Royale, usually written RKR, is India's top washed robusta grade — a re-graded, re-sorted selection of screen-17 beans drawn from washed Robusta Parchment AB, held to a zero-defect tolerance.
Two things make it distinctive. It is washed, which most of the world's robusta is not — the fruit is pulped and fermented off rather than dried on the bean, which strips out much of the woody, fermenty character that gives commodity robusta its name. And it is size- and defect-selected hard enough that it roasts evenly, which a mixed-screen robusta simply will not do.

Where each belongs on a menu
We are not interested in the argument about which is better. The useful question is which does the job.

A café that refuses robusta on principle is throwing away the most reliable tool it has for making milk drinks taste of coffee. A café that uses cheap robusta to cut costs is doing something different and the customers can tell. The distinction is whether the robusta was chosen or defaulted to.

Is arabica always better than robusta?
No. Arabica has a higher ceiling for sweetness, acidity and aromatic complexity, and most of the world's best coffees are arabica. But a carefully grown and processed fine robusta beats a carelessly handled arabica comfortably. Species sets potential; farming and processing decide what you actually taste.
How much more caffeine does robusta have?
