Why Your Coffee Tastes Bitter, and Why It Tastes Sour

Bitter and sour are not two problems. They are two directions away from the same middle, and most people reach for the fix that belongs to the other one. Bitter is too much extraction. Sour is too little. Nearly everything else follows from that one sentence.

What extraction actually is

A roasted bean is roughly 28 to 30 per cent water-soluble by mass. The rest is cellulose and stays in the filter. Brewing dissolves some fraction of that soluble portion and carries it into the cup. Extraction yield is the mass of dissolved solids divided by the mass of dry coffee. Most filter brewing lands between 18 and 22 per cent, a range the industry settled on by tasting rather than a law of nature.

The solubles do not all come out at once. They leave in a rough order: acids and light aromatics first, then sugars and the browning compounds formed in the roast, then the drying, woody phenolics and most of the caffeine last.

A brew that stops early has only the front of that queue: acid, no sweetness, no weight. A brew that runs too long has the tail nobody wanted. Bitter and sour are two ends of one dial.

Telling them apart in the cup

Under-extracted coffee is sour. A sharp, quick acidity at the front. Thin body. Often a faint salty edge, a reliable tell because salt comes out early too. The finish is short and hollow, and the cup usually smells better than it tastes.

Over-extracted coffee is bitter. Bitterness arrives late in the sip and stays. The useful word is astringent: mouth-puckering, chalky, tea stewed too long. Aroma goes flat and the finish is long and unpleasant rather than long and sweet.

Two rules make the diagnosis honest. Taste it black, and taste it at drinking temperature, around 55 to 60 degrees. Milk hides sourness, sugar hides bitterness, and a scalding cup hides both.

Then there is the confusing cup: sour at the front and bitter in the finish. That is not a dial position, it is an uneven bed, where some grounds gave up far too much while others barely got wet. Channelling, a lopsided pour, or a grinder throwing a wide spread of particle sizes. No single grind setting fixes two problems pointing in opposite directions.

Strength is not extraction

Strength is concentration: how much dissolved solid is in the water. Extraction is how much you pulled out of the grounds. A cup can be strong and under-extracted, and it tastes sour and heavy. A cup can be weak and over-extracted, and it tastes thin and bitter. If the coffee tastes correct but faint, add coffee or use less water. Do not grind finer.

Grind size

The largest lever by a distance. Finer particles mean more surface area, so extraction rises. Finer for sour, coarser for bitter, one step at a time. See the grind size chart.

Ratio

Coffee to water. It sets strength first, but more water per gram has more capacity to dissolve, so a wider ratio extracts a little harder. Around 1:16 is the common filter start. Our ratio guide has numbers by method.

In an immersion brewer — French press, AeroPress — time is set directly, and it is the easiest lever there. In a pour over, time is mostly an output of grind and pour rate rather than an input. A V60 running long is the grinder telling you something.

Hotter water dissolves faster. Roughly 90 to 96 degrees suits most filter coffee, lighter and denser roasts at the top of that band, darker roasts at the bottom. Below about 88, under-extraction becomes easy. A fine-tuning lever, not a rescue lever.

Agitation

Stirring, swirling, the turbulence of the pour. Agitation refreshes the water touching each particle and raises extraction. It also drags fines to the bottom of the bed, where they clog it. Useful in small, consistent amounts, and the fastest way to make a brew irreproducible.

Which one to change first

Grind, then ratio, then temperature. Change one thing, brew again, taste. Most people never solve a bitter cup because they grind coarser, drop the temperature and shorten the brew in one attempt, and learn nothing they can repeat.

Before you blame the recipe

The things that are not extraction

A recipe cannot fix a problem that is not in the recipe. Rule these out first.

  • Stale beans. Roasted coffee starts dying the moment it leaves the drum. Whole beans hold up for a few weeks; past roughly four to six weeks most bags have gone flat and papery. Pre-ground coffee measures its useful life in hours. Stale coffee is not bitter and not sour. It is empty, and people read empty as bitter.
  • Dirty equipment. Coffee oils oxidise and turn rancid, and rancid oil tastes exactly like bitterness that no recipe change touches. Rinse the brewer after every use, wash it properly once a week, and clean the grinder. A neglected French press plunger screen is the worst offender in most kitchens.
  • Water. Too hard and the cup goes dull and chalky. Too pure, as with straight RO, and it goes hollow. Covered below, because in Delhi it is usually the answer.
  • Coffee roasted too far. Past a certain point the bitterness is baked into the bean and there is nothing to extract around it. Visibly oily, near-black beans that smell of ash rather than coffee taste bitter at any grind setting.
  • Commodity robusta in a cheap blend. Canephora carries roughly twice the caffeine of arabica and more chlorogenic acid, and low-grade, heavily roasted lots are genuinely bitter in a way brewing cannot undo. A quality argument rather than a species argument: well-grown, well-processed canephora is sweet and heavy rather than harsh.
  • Chicory. Most South Indian filter coffee blends contain chicory, commonly 10 to 30 per cent. Chicory is a roasted root, not a coffee bean, and bitter by nature. That is the intended flavour of the drink. If a filter blend tastes bitter where your V60 does not, read the packet.

Local conditions

Delhi water, specifically

If you brew in Delhi and the coffee is dull, flat and slightly chalky no matter what you do with the grinder, the water is the first suspect. Piped supply varies by locality and by source: Yamuna raw water, canal water and borewell groundwater all behave differently, and the same tap changes through the year.

Two numbers matter. Hardness is the calcium and magnesium content, and those minerals help extraction by binding to flavour compounds, so soft or reverse-osmosis water brews a hollow, empty cup. Alkalinity is the bicarbonate content, and it buffers acid. High alkalinity neutralises the acidity in the cup, which is why a bright, citric coffee arrives in a Delhi kitchen tasting muted and vaguely chalky. It is not under-extraction, and grinding finer makes it worse.

Widely used brewing water guidance puts hardness around 50 to 175 ppm as calcium carbonate and alkalinity around 40 to 75 ppm. Treat those as ranges to aim at, not a pass mark. Much Delhi groundwater sits well above both. The usual fix is blending RO or distilled water back up with a small mineral addition, or a filter rated for hardness and alkalinity rather than taste alone. Scale is the other cost: a furred kettle element runs cooler than the display says, and that quietly under-extracts everything.

Bitter and sour, answered

Why does my coffee taste bitter?

Usually over-extraction: the water spent too long with too much surface area and pulled out the drying compounds that come last. Grind one step coarser and brew again. If it is still bitter at a much coarser grind, the cause is not the recipe. Look at roast level, staleness, dirty equipment or water.

Why does my coffee taste sour?

Under-extraction. Acids dissolve first, so a brew that finishes too early is all acid and no sweetness. Grind finer, check the water is above 90 degrees, and make sure the whole bed gets wet. A sharp, thin sourness with a short finish is under-extraction; a juicy acidity with sweetness behind it is the coffee doing its job.

Should I grind finer or coarser to fix bitterness?

Coarser. Finer grinding raises extraction, and bitterness is already too much extraction. This is the commonest mistake, because a bitter cup feels strong, and strong feels like it needs less coffee rather than less contact. Go one step coarser and taste.

Can I fix bitter coffee by adding water?

Only partly. Diluting lowers concentration, so the bitterness is less intense, but the compounds sit there in the same proportion and the cup tastes watery and bitter instead of strong and bitter. Dilution fixes strength. It does not fix extraction.

Does a dark roast always taste bitter?

No. Darker roasts are more soluble, so they over-extract at a recipe that suits a light roast, and they carry more roast-derived bitterness to begin with. Grind a step coarser and drop the water to around 88 to 91 degrees. Coffee roasted past the point of visible surface oil is a different matter, and that bitterness is permanent.

Does hard water make coffee bitter?

Hard water more often makes coffee dull than bitter. The bicarbonate that accompanies hardness buffers acidity, so the cup flattens and reads as chalky and heavy. Very high mineral content also scales the kettle, which lowers the real brewing temperature. In Delhi, treat the water before changing the recipe.
