  1. Where it grows

Typica grown in Lam Dong, Vietnam, between 1,400 and 1,600 m, and processed as a natural. In a natural the cherry dries whole, so the fruit sugars have time to work their way into the seed. Here that builds syrupy sweetness and not brightness, which is why the coffee reads rich and composed. Fruit leads, cocoa closes, and the finish stays clean.

  2. How we roast it

The roast sits at Depth 47, medium, so one bag can go on the filter bar and the espresso machine. As filter it lands juicy and rounded. As espresso it runs thick and syrupy, with jammy fruit up front and a polished finish. Bold without excess. It is not a delicate coffee.

Keep it

Seal the bag after every use and keep it at room temperature, away from light and the stove. Not in the fridge. Finish an opened 250 g bag within three to four weeks. Whole bean keeps longest.

Pair it

  • Buttered toast and jam.
  • A square of dark chocolate.

Why does it say Notify me?

It is between lots right now. Press Notify me, tell us you want it, and we will let you know the day it is back.

Is it good as espresso?

Yes. It was roasted for filter and espresso both. At about 1:2.2, 18 g in and 40 to 42 g out in 28 to 32 seconds, it runs thick and syrupy with jammy fruit up front.

What does natural mean here?

The cherry dries whole, with the fruit still on, before the bean is taken out. In this coffee that builds syrupy sweetness rather than brightness: fruit first, cocoa last, a clean finish.

Grind medium. Pulls well too, at 18 g in and 40 g out. A house baseline for this depth, not a rule for this lot — move one thing at a time.
