  1. Where it grows

Ratnagiri is a 117-hectare estate in the Attigundi area of Chikmagalur, on ground that drains off the Baba Budan range, the hills where coffee first came to India. One family has held the land since 1927. This lot is SLN 9, a large-bean selection with good acidity, grown at 1,310 m under dense shade.

  2. How it is processed

Washed means the fruit comes off the bean before it dries, and the bean is fermented clean. Ratnagiri runs more than 15 processing protocols in a season, and this is the full washed one, the lot we buy for clean cocoa and defined sweetness. The cup gets controlled acidity rather than fruit. If fruit is what you want, this is the wrong bag.

  3. How we roast it

Depth 45, medium. We roast it after you order, in New Delhi, and stop where the cocoa has gone toasty and sweet while the brightness is still there. Go further and the brightness goes. Stop sooner and the sweetness has not arrived. It comes out much the same in an espresso machine, a V60 or a French press.

05questions
Which grind should I choose?

Pick the one that matches your brewer: Home Espresso Machine, Pourover/V60/Kalita/Origami, French Press, AeroPress, Mokapot and the rest are all listed. If you have a grinder at home, choose Whole Bean. It keeps longest and you set the grind yourself.

How is this different from the Natural Cut?

Same estate and the same SLN 9, a different process. The Washed Cut is clean, with defined sweetness and controlled acidity. The Natural Cut is red fruit and jam over a heavy body, with a funky finish. Reach for the Washed Cut most days.

Can I make espresso with it?

Yes, espresso is one of the three brews it is listed for. Start at 18 g in, 38 g out, 93 °C, in 27–30 s. Expect cocoa and caramel with a smooth, structured finish. Change the grind, not the dose, to land on time.

How fresh will it be?

Roasted after you order and usually dispatched within 1–2 working days. Your tracking link arrives by email once the courier picks the parcel up.

Can I get 1 kg?

Yes. Choose 1 KG beside the grind. It is the same coffee at the same roast as the 250 g bag. Coffee is best within 4–8 weeks of roasting, so pick the size you will finish in that time.
