  1. Where it grows

Yirgacheffe, Ethiopia, from mixed heirloom varieties. We list it as mixed heirloom because it is not a single named variety, and its elevation is listed as 1,700 to 2,200 m. The coffee is washed, so the fruit comes off the bean at the mill before drying, and what we roast is clean seed. That is where the clean cup starts.

  2. How we roast it

Depth 50, a medium omni roast, set to work on filter and espresso from the same bag. We roast for sweetness and body, not acidity, so the washed clarity leans toward cocoa, roasted nuts and soft vanilla rather than sharp fruit. Roasted to order at our roastery in New Delhi.

  3. How it behaves

On a V60 the cup stays smooth and cocoa-driven, with a calm finish. As espresso, at around 1:2.1, the shot runs creamy and chocolatey, with caramel cookie sweetness through the middle. It takes milk well. Acidity stays low and the body stays round, so it is not the bright, high-toned Ethiopian some people expect from Yirgacheffe.

Keep it

Keep the bag sealed and somewhere cool, dry and dark. Not the fridge, not the freezer. Grind just before you brew; whole bean keeps longest.

  • Espresso after dinner.

Ask us

05questions
Is Cozy Cookie a bright Ethiopian?

No. It is a washed Yirgacheffe roasted medium omni for sweetness and body, with low acidity. Expect cocoa, roasted nuts and soft vanilla. If you want a brighter Ethiopian, write to us and we will suggest one.

Can I use it for both filter and espresso?

Yes. The omni roast is set for both. For filter use 15 g to 240 ml of water. For espresso use 18 g in and 38 to 40 g out in 28 to 32 seconds.

Does it work in milk?

Yes. It takes milk well. The body stays round, so the chocolate and caramel cookie sweetness are still there in a flat white or a cortado.

Can I get it ground?

Yes. Choose the grind when you add it to the cart: whole bean, home or commercial espresso, South Indian filter, AeroPress, moka pot, pour-over, Chemex, French press or cold brew. Both 250 g and 1 kg come in every grind. We grind exactly what you choose and cannot un-grind it, so order whole bean if you are unsure.

How fresh will it be?

Roasted to order. Most orders leave us within 1–2 working days, up to 4 in a heavy roast week. Courier delivery usually takes 2–4 working days to the metros and 4–7 to the rest of India.
